INGREDIENTS:
2 tablespoons butter or part bacon drippings
5 or 6 green onions, with about 3 inches of green, thinly sliced
1 rib celery, diced
3 tablespoons diced sweet red bell pepper
2 tablespoons flour
1/4 teaspoon Creole seasoning
3 cups chicken broth
1 1/2 cups corn kernels
1 1/2 cups heavy cream, fresh or frozen and thawed
1 1/2 to 2 cups diced cooked lobster meat
1 medium tomato, seeded, diced, optional
salt and pepper, to taste
1 tablespoon dry sherry, optional
crumbled cooked bacon, optional
PREPARATION:
Heat butter in a medium saucepan over medium-low heat; add green onion, celery, and bell pepper. Saut茅 until celery is tender, stirring frequently. Add flour and stir until blended. Stir in Creole seasoning and chicken broth.
Stir in corn kernels. Cook, stirring, until thickened and bubbly. Stir in heavy cream, lobster, and tomato. Taste and add salt and pepper, to taste. Stir in sherry and heat through.
If desired, top each serving with a little crumbled cooked bacon. Serve with crackers or hot buttered biscuits.

INGREDIENTS:
live lobsters
boiling salted water
melted butter
PREPARATION:
Bring a very large kettle of salted water to a rolling boil. Using long tongs, quickly but carefully lower live lobsters into the boiling water. Simmer for about 10 minutes, or until lobsters are bright red.
Serve with melted butter for dipping.
another recipe:
INGREDIENTS:
2 large lobsters, about 4 pounds total, cooked (approximately 4 cups lobster meat)
butter
6 cups milk
2 cups heavy cream
salt, pepper, and paprika
dash dry sherry, as desired, for flavor, optional
fresh chopped parsley or green onions for garnish
PREPARATION:
Remove meat from cooked lobsters. Cut meat into cubes and fry in a generous amount of butter (4 to 6 tablespoons) until very lightly browned (be careful not to burn the butter, or use clarified butter).
Heat milk; add to lobster meat and cook slowly for 5 to 10 minutes. Add heavy cream and bring just to the boiling point. Add salt and pepper to taste and a little paprika for color. If desired, stir in a dash of sherry for extra flavor. Garnish with sliced green onions or chopped parsley as desired.

8 ounces soy sauce
20 ounces butter, unsalted
20 ounces angel hair pasta cooked
4 ounces sesame oil
4 ounces hot chili oil
8 each lobsters blanched, chopped
2 bunches scallions, spring or green onions sliced
2 each sweet red bell peppers seeds, membranes removed, diced
2 each yellow pepper seeds, membranes removed, diced
8 ounces mushrooms, oyster cleaned and
8 ounces mushrooms, shitake cleaned.
Directions
Bring soy sauce to a boil, add butter in chunks, stirring until all is incorporated.
Set aside. Cook angel hair pasta in boiling salted water until andquot;al dente.
Combine sesame oil with hot pepper oil (approximately 1 ounce total per portion based on the desired hotness).
Stir-fry lobsters in oils after coming up to smoke stage.
Add scallions, peppers, and mushrooms.
Cook until al dente.
Add angel hair pasta and soy butter to mixture, toss everything together.
Place on center of each plate. Arrange hot lobster shells on plates to appear as a whole lobster presentation.
