You have to slit the back of the shell and pull the meat on to the top.


That was broiled or baked.


The coloring is Paprika.

Except if your going to bake or broil it, the paprika should be put on 1st.( that's what gave it the darker color). This tail was baked or broiled.


If you steam it, then the Paprika goes on after( but it will not have the same color as in the pic). It will be pure red with no burnt effect. Broiled or baked is better for the look that you want.How can I cook a lobster tail to look like this?
jc was right on. However, you want to cut part way through the meat and spread it apart. This is called a ';butterflied lobster tail';. The meat is essentially hanging onto the shell by a thread. Even if it does come all the way out of the shell it is still easy to make it look like the picture. It takes a little practice, but its not that hard.





The best way to butterfly a lobster tail is to use a pair of kitchen shears (scissors). Butterfly the tail BEFORE you cook it. It should look just like the picture. Then, steam it for 12 min. (or you can broil or bake it). Sprinkle paprika on it and you're good to go.
