I need to know everything about cooking a lobster dinner!?

my husband is a HUGE lobster fan %26amp; i am cooking my first lobster dinner for him tomorrow night and i have NOclue what i am supposed to do!


I want to but live lobsters from the local grocery store and cook them live. how do i do that?


what do i put with the lobster? How do i know when they are done?

Heres what you do.





I don't know how many lobsters you are planning to cook, but you want a pot with a lid big enough to hold them.





Fill the pot with about four inches of water on the bottom and put 1 tbl of sea salt in the water. Bring the water to a boil. Put the lobsters upside down in the pot, put the lid on and set a timer for 12 minutes. When the timer goes off, pull the lobsters out and let them sit 5 minutes before serving.





I've have always done lobster dinner in 4 courses:





Steamed clams


salad


lobster


dessert





For the fresh clams, rinse them in cold water, put them in a pan with and almost cover them with beer. Put a lid on the pan and boil until they open up. Serve with garlic bread.





The lobster I have always served with melted butter, boiled new potatoes and corn on the cob. Choose whatever salad and dessert you like.





Use nut crackers and picks to break the lobsters apart. It is helpful to cut a slit into the under side of the lobster all the way to the end of the tail.





This steaming method to lobster is far superior to boiling and the lobsters come out suculent and tender. The sea salt really makes this dish.

Best advce to the entire dinner: go to you library or foodtv.com and they'll give you all the advice you need. Happily, you will find that lobster is very easy to prepare. My favorite sides: corn on the cob, baby red potatoes, fresh baked bread/rolls%26amp; butter, and a nice tossed salad. Beefeater martinis are also appropriate. Enjoy!

Ingredients:


2 whole lobster tails


1/2 cup butter, melted


1/2 teaspoon ground paprika


salt to taste


ground white pepper, to taste 1 lemon - cut into wedges, for garnish


Method


Preheat the broiler. Place lobster tails on a medium baking sheet. With a sharp knife or kitchen shears, carefully cut topside of lobster shells lengthwise. Pull apart shells slightly, and season meat with equal amounts butter, paprika, salt, and white pepper. Broil lobster tails 5 to 10 minutes, or until butter is melted and lightly browned, and lobster meat is opaque. Garnish with lemon wedges to serve





Serve with a lettuce salad.
Lobster is pure heaven if it's done right. Steam it for the easiest, most foolproof way...





Steamed Lobster





1 tablespoon salt per 1 quart water added


2-2 pound Maine lobsters


1 medium onion, rough chopped (approximately 3/4 inch square )


1 tsp cracked peppercorns


2 bay leaves


whole branches of fresh dill (if no dill, substitute tarragon or parsley)





Cover onion and seasonings with 1 1/2 inches of water.


Bring to a boil and add the steamer basket with the lobsters in it and cover tightly.


If you don't have a steamer basket, put lobsters right in the pot.


Cook for 15 minutes, making sure there's still enough water in the bottom of the pot. If you do add more water, it is not necessary to add more salt, because only the water evaporates.


Serve with what you like, but I love mine with just a fresh salad, a steamed or baked potato, and a glass of wine!
