Romantic lobster dinner recipes? What is a good side?

I want to make a special dinner for my boyfriend next week. I figured I'd make lobster tails, with some sort of side, appetizer, and dessert. Any good ideas for a meal? He HATES rice and I'm not a huge fan of potatoes, so that leaves very few options.


Also, how can I cook the lobster and give it some flavor? All the recipes I've found so far are just plain grilling/broiling recipes. Any ideas? And what would be a good, fancy appetizer to make with it? Thanks!Romantic lobster dinner recipes? What is a good side?

Lobster Tails Thermidor





4 (6 to 8-ounce) packaged lobster tails, shell jumbo shrimp or prawns can be substituted


4 tablespoons butter, divided


1 small white onion, finely chopped


2 tablespoons all-purpose flour


Splash dry white wine or dry sherry


1/2 cup milk, eyeball it


1/3 cup grated white cheddar


1/2 teaspoon paprika or crab boil seasoning, recommended: Old Bay


2 tablespoons Parmesan


2 tablespoons bread crumbs


Handful parsley leaves mixed with 2 cups baby greens, for plate garnish


Lemon wedges, for garnish





Bring a pot of water to a boil, 3 or 4 inches deep. Add lobster tails to the water and boil 7 to 8 minutes. Drain and shock under cold water to cool. Use kitchen scissors to cut away soft underside of tails. Remove meat and save the shells, arranging them in a shallow casserole dish. Chop the cooked meat on an angle into chunks.


Preheat your broiler to high.





Heat a medium skillet and a small saucepot over medium heat. To the small saucepot, melt 2 tablespoons butter. Add finely chopped onion and cook 3 to 5 minutes until very soft. To the skillet, add remaining 2 tablespoons butter. When the butter melts, add chopped lobster meat and saute.





Add flour to sauce pot with onions and cook together another 1 to 2 minutes. Whisk in wine or sherry, then milk. Remove sauce from heat and stir in cheddar cheese and paprika or crab boil. Season sauce with salt and pepper. Pour sauce over lobster meat and stir to combine. Pour lobster into and over the shells in a casserole dish and top with Parmesan and bread crumbs. Broil on high until golden, 2 or 3 minutes. Serve each tail, spilling over with lobster bits in sauce, on a bed of mixed baby greens and parsley with wedges of lemon along side.





To make this dish with jumbo shrimp, cut up peeled, deveined raw shrimp. Saute the shrimp in butter, as with cooked lobster. Cook until pink and firm and proceed with method. Place the shrimp and sauce into a small casserole, then spoon completed shrimp Thermidor over bed of greens and parsley leaves.

Smoked Trout Canapes with Creme-Fraiche and Herb Sauce for Two (appetizer)





Creme Fraiche and Herb Sauce:


1/2 cup creme fraiche


1 tablespoon chopped fresh flat-leaf parsley


1 teaspoon snipped fresh dill, plus some fronds, for garnish


1 teaspoon snipped chives


1 teaspoon chopped fresh tarragon leaves


1/2 teaspoon freshly grated lemon zest


1/2 teaspoon freshly squeezed lemon juice


Salt and freshly ground black pepper


4 squares mini-pumpernickel bread


4 ounces smoked trout, bones removed








For the sauce: In a small bowl combine the creme fraiche, herbs, lemon zest and juice, salt, and pepper.


Assemble the canapes: Dab a teaspoon or of creme fraiche sauce on 1 side of the pumpernickel slices. Place 1 or 2 large flakes or chunks of trout on each, and top with a small dollop of cr猫me fraiche sauce. Garnish each canape with a frond of dill, and serve.

Berry-Mi-Su: Berry-Me-Up





1 package ladyfingers


1 package frozen raspberries, defrosted, 10 ounces


8 large strawberries, sliced


1/2 cup fresh blackberries, a couple of handfuls


1 cup mascarpone cheese, available in specialty cheese case of supermarket


1/3 cup heavy cream


1/2 cup confectioners' sugar





Open the ladyfingers and separate them.


Strain the frozen berries over a bowl, reserve juice. Combine defrosted raspberries with sliced strawberries and blackberries.





Line 4 martini glasses with a single layer of ladyfingers, letting the cakes overlap a bit at the stem. Press the cakes down a bit to fit the lines of the glass. Paint the ladyfingers with raspberry juice, liberally. Beat cheese with cream and sugar on low, 2 minutes. Spoon berries, then sweetened mascarpone into glasses. Top glasses off with a cap of the ladyfingers dotted with berry juice and more mixed berries.

Lemon Almond String Beans





2 tablespoons sliced almonds


1 pound green beans, trimmed


2 to 3 tablespoons unsalted butter, cut into small chunks


1 lemon, zest finely grated


Kosher salt


Freshly ground black pepper











Heat a small skillet over medium-high heat. Add the almonds, shake and swirl until golden brown, about 2 to 3 minutes. Set aside to cool.





Bring a saucepan of water to a boil and salt it generously. Add the green beans and cook until crisp-tender, 5 to 6 minutes. Drain and toss with the butter, zest, and season with salt and pepper. Transfer to a serving bowl. Scatter the almonds over top and serve.

Whenever I make lobster... I precook the lobster, than take out all the meat and pan-fry it with lemon and garlic butter. Then I have a little dish of melted garlic butter with a splash of lemon for dipping. On the side we always have caesar salad (because salad and seafood go great together) and fresh bread.





A great appetizer you could make could be bacon wrapped scallops to stick with the seafood theme... or even clam chowder... mmmmmm

Cajun lobster and asparagus fettuccine Alfredo


ingredients:


1 bundle of asparagus


1 lobster


1 bottle of ragu Alfredo sauce


1 Alfredo noodles


1 tbs butter


1 tbs of crab, broil crawfish mix





boil the lobster and remove the cooked lobster and use the broth to cook the noodles set aside when done


cut the lobster tail into bit sized cubes


cut the asparagus into 1 cm bits (optional how much you want to put in)


heat cooking pan on med. heat


add the asparagus to the pan cook for 10 mins


add the lobster and the Alfredo sauce


then add the tbs of crab broil mix


cook until everything comes to a boil


add the noodles to the sauce


and there you have it!





very simple and very good with pouched lobster!
starter. basil, tomatoe and mozerella salad... so simple


main boil the lobsters in water a cup of chicken stock, finely chopped red onions, 2 finely chopped red chillis, salt and pepper, serve with spicy vegetable cous cous or cook spigetti and add a simple chilli maranade over the top, finely chop and deseed 2 chiilis a finely chopped small red onion 1/2 lemon juice, a small amount of the zest and enough olive oil to cover.. with a small dish of melted butter to dip the lobster in, drizzle a little of the stock you boiled the lobster in over the cooked lobster .

A crisp salad, full of fresh tastes and crunchy bread and butter make the best sides!


(I live on the ocean and catch my own - so mine is a real coastal opinion)
a great side with any seafood is fettuccini alfredo. an appetizer could be something like crab cakes. and a dessert would be great if it was a cheesecake, and if you don't like cheesecake, then go with a lemon merange pie. that would be perfect.
crab boil and boiling water for the tails. steam asperagus on top in a screen collander .a dassh of lime and or lemon juice.


stawberry shortcake or cheesecake for desert.
