How to cook a lobster?

bring a big pot of water to a boil, salt and add lemon juice,

Heat up a large kettle of lightly salted water to boiling. Take the live lobster and drop it head first into the boiling water. In about ten minutes it will be bright red and ready for eating with drawn butter.

make sure you purchase some old bay seasoning. This is how i do it; in a quart size pot i boil old bay seasoning, beer and lil water, once the mixture comes to a boil (be sure that the water only covers the lobster half way, do not submerge lobster in water) place lobster in pot and steam for 10 to 15 minutes be sure you do not over cook the lobster.





Tip adding a lil vinegar to the pot boil we allow the meat of crabs and lobsters to slide right out.

Avocado and Lobster Salad:





Two 1 1/2-pound lobsters


3 tablespoons rice vinegar


1/2 teaspoon soy sauce


1/4 teaspoon finely grated fresh ginger


Pinch of sugar


3 tablespoons canola oil


Salt and freshly ground pepper


1 bunch watercress (6 ounces), large stems discarded


1 Hass avocado, peeled and cut into chunks





1. In a large pot of boiling water, cook the lobsters until they turn bright red, about 13 minutes. Drain and let cool. Twist off the tails and claws. Crack the claws and remove the meat; cut into large pieces. Using kitchen scissors, slit the tail shells lengthwise up the center and remove the tail meat. Remove the black intestinal tract and discard. Cut the tail meat into 1-inch medallions. Cover and refrigerate the lobster meat.





2. In a large bowl, combine the vinegar with the soy sauce, ginger and sugar. Whisk in the oil until emulsified, then season with salt and pepper. Add the watercress and lobster and toss gently, then add the avocado and toss just until dressed. Serve chilled.





Make Ahead: The lobster meat can be refrigerated overnight.

I think the easiest way is to just boil it. Boil enough water to cover the lobster, add some salt. When it comes to a boil, place the lobster in the water and let it cook from 5 - 10 minutes depending on the size.
