Don't boil the lobster, or else it gets water logged. The best method is to steam it. Try this:
2 (1 1/2-pound) lobsters
Fresh herbs: parsley, rosemary, thyme
4 tablespoons of butter
1/2 onion, diced
1 teaspoon lemon zest
2 tablespoons sliced scallions
2 handfuls crumbled buttery crackers
Extra-virgin olive oil, for brushing and drizzling
Preheat oven to 450 degrees F.
Place lobsters in pan and chill in freezer for 15 to 20 minutes.
Meanwhile, place 1 layer of river rocks* in the bottom of a wide pot and fill with 1-inch of water. Bring to a boil over high heat. Spread herbs across rocks, then quickly place lobsters on top. Cover and cook for 2 to 3 minutes. Remove and place in ice bath to halt cooking.
Lay paper towels across a cutting board. Bring one lobster to the board and using your chef's knife, cut the lobster straight down the center, from head to tail. Remove tomalley and discard. Remove legs and claws. Using a rolling pin, roll over legs to extract the meat. Roughly chop the meat.
Move claws to pan and roast for 4 minutes.
Meanwhile, melt the butter in a large saute pan over medium heat. Add the onions and stir to coat. Follow with the lemon zest and scallions. Once onions are translucent add the leg meat. Then add the crackers and toss, off the heat, until all the liquid has been absorbed.
Spoon filling into the open body cavities. Brush tail meat with olive oil and place upright on the pan along with the claws. Roast 10 to 14 minutes or until the stuffing browns and tail meat becomes opaque.
Crack claws and remove the meat. Serve on top of stuffed lobster with extra-virgin olive oil on the side for dipping.

Split the lobster in half lengthwise, brush with olive oil or butter, salt and pepper and a squeeze of lemon. Grill, BBQ or broil. Do not overcook. Serve with dipping sauce of melted butter beaten with fresh lemon juice.
boil it in a lg. pot, add onion garlic and lemon to the water. when it's whiteish it's done mmmmm.....

BAKED CREAMED LOBSTER
1 c. lobster
1 c. cream sauce
2 hard boiled eggs, chopped fine
Salt and little paprika
Parsley, chopped fine
Cover with buttered crumbs and bake until brown.
about (350 degrees) 30 minutes
you can steam it. or boil it... and make some melted butter yumm im getting hungry i better go lol
6 oz liquid crab boil( Zataran's Garlic %26amp; Onion ,if available)
2 season socks of Zataran's Crab Boil
2 Large Onions...Quartered
3 Lemons..Quartere
1/2 box of salt
3 Heads of garlic
1LB. butter
1 teaspoon galic powder
liquid hickory smoke flavoring
2-4 Lobsters(1-1/2 pounds...smaller the better)
Cayenne pepper to taste
Add liquid crab boil ,seasoning socks,onions,lemons,salt,galic,and cayenne pepper to pot of boiling water.
Boil for 15 mins.
add lobsters to the pot and time it until it starts to boil again.
boil 5 minutes and no more.After that,turn off the fire and let them rest in the pot for 15 mins. The longer they rest the better they are,cause they absorb more of the flavor from the water
as a crayfisherman,,there are lot of recipes,,you can put in a pot of water with apricot or pineapple juice,onion herbs,,,bit of garlic,,i'prefer to steam them you get a better flavour from them,,when you boil them you loose a lot of the meat flavour just use a steamer and put the flavours in the water and steam them,,you still get the flavours through and you get the meat tasting sooooooooo nice,,,, then theres the barbicue way,,,wrap up in aliminium foil with whatever flavours you desire and put on barbie,,turning every 1/2 hour for about a hour,,,,,yummy,,,,,,,,
