My mother went to Mexico with few friends a few years back, and they went out for lobster that night. She said they cooked the lobsters in front of them in a large pot of hot butter and I was wondering has anyone else ever heard of doing this, and if so, at what temperature do you have the butter on to keep it from burning or browning. How to cook lobster in butter.?
LOBSTER TAILS SAUT脡ED IN BUTTER
My family loves lobster but, because of the cost, I reserve it for a special treat. When it's on sale, I buy enough for several meals and freeze it. Sometimes we really splurge and have a surf and turf with a small lobster tail and filet mignon. Now that's extravagant. After trying different methods for cooking small lobster tails, I have decided I prefer this. It's easy and the meat is never over or under cooked. It's also easier for everyone to eat since the shell is removed.
INGREDIENTS
8 small lobster tails, about 4 ounces each
1/4 cup butter
Salt and pepper to taste
Cut a slit in the underside of the tail. Remove the meat, using a fork if necessary to loosen it from the shell, pulling the meat from the wide end to the tail tip. Heat the butter in a large fry pan over medium-high heat. If desired, let the butter brown but be careful not to burn. Add the lobster tails and saut茅 until done, about 5 minutes, turning a couple times to cook evenly. Sprinkle with salt and pepper. Serve immediately, spooning a little of the hot butter over each tail. How to cook lobster in butter.?
I never heard of such a thing. Are you sure the lobsters were alive, or were they cooked and they just put them in the pot of butter to coat them? You make me hungry, regardless!

Your mother left out some info on her Mexican Lobster dinner. It's called Paella. It's made in a huge pot with water, oil, and butter. The water constantly cooks down as you had the seafood (it's not just lobster by the way). They keep adding the ingredients as they cook. They add vegetables and lots of rice. Normally this dish is made for lots of people not just one table.
I imagine they boiled the lobster and added a bunch of butter to the boiling water. If it were just butter it wouldn't boil, it would start to smoke and catch fire.
I doubt it. You can boil it and then quickly sautee the lobster in butter.
Allen..a LARGE pot of butter would cost more than a lobster..try this..put the bug in a big zip-lock bag with old bay seasoning and some butter..microwave for 4-6 minutes or until he is nice and red and done...dont waste time boiling water..this works with all shellfish and we do it in the restaurant I run..bon appetit!
I have never really heard of doing it. Lobster and butter are both very high in cholesterol though so please be careful if yours is high! Check out the link below.
i think its better to steam the lobsters in water, then dip into butter so you don't have to worry about heating up butter to the right temp. plus, i think it tastes better that way.
I would totally boil the lobster and then just use the butter as a dipping sauce. That is the only way I've ever had it.
P.S. Be sure to boil the water THEN drop the lobster in. I've heard terrible stories about people who put the lobster in, then turn up the heat! Talk about a tortured lobster!!!
That would take a load of butter. What you can do is steam it till it's almost done, then take all the meat out and saute that in butter....
