Cooking lobster help please?

thank you for reading , i want to cook a lobster tonight can i put a lobster in boiling water ? and how long do i leave it in the boiling water ? how do i know when its done ? help please its dinner time thank you .Cooking lobster help please?
I am a former chef from Canada and have cooked over 1000 lobsters, first you cook it 7 minute per pound, so a 1 1/2 pound lobster is done in 10-12 minutes no more or it will be chewy, and why waste your money on chewy lobster.





Bring the water to a boil, add a generous handful of salt, drop the lobster in, put the lid on to bring it back to boil then remove the lid, and time it for the cooking time.





When it is done, take it out, let it rest just like a steak or all the juices run out (2-3 minutes), then either split it, or pull the claws and tail off, alot depends on how your serving it.





If you ever venture into a dish like Lobster thermidor, you only half cook the lobster as your warming it in the sauce in the end.





Hope this was of service, I have not eaten it in sometime, it is like turkey, I did so many over my 20+ yr career, it is somethng I can do with out.Cooking lobster help please?
Boiling is one of the simplest ways to cook a lobster, and is probably best for the squeamish that don't wish to cut up a live lobster with a knife. Some say that you can 'hypnotize' a lobster by rubbing the top of its head or its abdomen, thereby pacifying it before boiling. The theory is that the adrenaline produced by a frightened lobster adversely affects the texture and flavor of the meat. I have never seen or tasted any evidence of this, but if you want to cover all possible bases, go ahead and hypnotize your lobster. It is important to select a pot big enough to hold enough water to cover the lobsters completely. Bring the water to a rolling boil and add 1 tablespoon salt per quart of water. Put the lobsters in claws first and begin timing from the moment the water comes back to a boil. Boil the lobster for 10 minutes for the first lb of weight and then 3 more minutes for each extra pound. A two lb lobster will be done in 13 minutes, a 3 lb lobster in 16 minutes

1. Fill a large pot half to two-thirds full with water.


2. In high heat, bring water to a rolling boil.


3. Add lobsters to the pot head first, making sure that they are completely submerged.


4. Cover the pot tightly and return to a boil as quickly as possible.


5. Once water is boiling again, cook the lobsters 10 minutes for the first pound and 3 additional minutes for each additional pound, i.e., cook a two-pound lobster for 13 minutes.


6. When the antennae pull out easily, the lobsters are done.


7. Serve with melted butter.





Tips:





1. Be sure to keep the water boiling throughout the cooking time, but be careful that the pot does not boil over.


2. Times given are for hard-shelled lobsters; if cooking new shell lobsters, reduce boiling time by 3 minutes.


3. Try adding a cup of white wine to the water before boiling to add a bit of flavor.
