Juice of 1 med. lemon

1 c. water

Split lobster tails in half lengthwise. Remove sharp edges. Sprinkle each with parsley and salt and pepper (if desired). Pour olive oil and lemon juice on each tail.

Pour water on bottom of a shallow 7 x 11 inch baking pan. Place lobster tails in pan. Bake in a preheated oven at 375 degrees for 25 minutes or until tender.

*BAKED STUFFED LOBSTER TAILS

3 lobster tails (6-8 oz. each), thawed if frozen

4 tbsp. melted unsalted butter

1 c. soft fresh bread crumbs

1 tsp. dried tarragon

1 tsp. salt

1/4 tsp. freshly ground black pepper

Lemon wedges

1. Preheat the oven to 450 degrees. With scissors, remove the thin shell covering the underside of the tail by cutting along each side.

3. Place the lobster tails in a baking pan. Bake for 20 minutes or until the lobster meat is opaque and the crumbs are brown. Serve with lemon wedges. Serves 3

*Broiled Lobster Tails

3 whole lobster tails

1/2 cup butter, melted

1/2 teaspoon ground paprika

salt to taste

ground white pepper, to taste

1 lemon - cut into wedges, for garnish

Preheat the broiler.

Place lobster tails on a medium baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise. Pull apart shells slightly, and season meat with equal amounts butter, paprika, salt, and white pepper.

Broil lobster tails 5 to 10 minutes, or until butter is melted and lightly browned, and lobster meat is opaque. Garnish with lemon wedges to serve.

*Grilled Rock Lobster Tails

1 tablespoon lemon juice

1/2 cup olive oil

1 teaspoon salt

1 teaspoon paprika

1/8 teaspoon white pepper

1/8 teaspoon garlic powder

3 rock lobster tails

Preheat grill for high heat.

Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade.

Lightly oil grill grate. Place tails, flesh side down, on preheated grill. Cook for 10 to 12 minutes, turning once, and basting frequently with marinade. Discard any remaining marinade. Lobster is done when opaque and firm to the touch.

*Orange-Scented Grilled Lobster Tails

1/4 cup butter

2 teaspoons lemon juice

1 tablespoon grated orange zest

1/8 teaspoon ground ginger

1/8 teaspoon chili powder

1/8 teaspoon aromatic bitters

3 lobster tails

Preheat an outdoor grill for medium heat, and lightly oil grate.

Melt the butter in a saucepan over medium heat, and stir in the lemon juice, orange zest, ginger, chili powder, and bitters. Simmer gently for 2 minutes, then set aside. Cut away the membrane on the underside of the lobster tails, and insert a metal skewer into each one. This will prevent them from curling up as they cook.

Cook the lobster tails shell-side up on the preheated grill for 10 minutes, then turn the tails over, and spoon the butter sauce over the meat. Continue cooking until the meat is no longer translucent in the middle, about 10 minutes more.

If lobster tails are still in the shell, split the shell lenghtwise first.

Obviously they are cooked already if they are tails - ??? are they pink.

If so split them open and cut out the lovely meat, make up a thermadore sauce - cream, mustard, parmasan - add the meat place back in the shell - top with a little grated parmasan and grill till golden.

Or serve with creamy speghetti, a touch of chilli and cream or

serve with salad and a home made mayonnaise or aoli

or

If raw and alive cook with a good stock and some seasonal vegatables
